Spring is in the air and fruit is plumping on the vine, in the garden and the orchard. Your cupboard may be full of beautiful jams and jellies from last year-so what will you can this year? Pie, tart and cake fillings may be just the answer! In addition if you prefer to avoid commercial products containing food additives this process provides options to do so. 

Pie fillings can be made using fresh or frozen fruit, offering a wide variety of flavor choices, as well as opportunities to use the fruits you froze last year.

Join UCCE Master Food Preservers of Amador/Calaveras County as they demonstrate in detail selecting and preparing fruit, using Clear-Jel as a thickener and adding other ingredients to produce flavorful fillings. The canning process will be demonstrated using boiling water and atmospheric steam canners. In addition, we will demonstrate basic steps for dehydrating and freezing your spring fruits. Leave this class inspired and with several research based, scientifically tested recipes to try at home.

Class fee: $5, payable at the door
