I as a retired educator in the Coachella Valley Unified School District agree with the changes you suggest. I think it is possible to train or retrain children or adults to eat more nuticianally. I have been working at this for myself for several years. Thank you for your article. Jeff.

If we continue making healthy food more exciting and appealing, we will see more nutritional food being consumed.

I have heard from some schools that students don't have much time to eat and recess follows lunch. The districts are considering having recess before lunch and allowing more time for children to eat. However, as with everything especially time schedules at schools, it may take time to make some changes.

Mary, thank you so much for your comments. At our last session with the Cornell BEN Center, we learned that research indicates an equal benefit to the recess before/after lunch opportunity. some kids come late to school so they sometimes cant make it to breakfast.
