i read that some thistles may hybridize. I can not get a definate id on 2 thistles in my pasture.  
The flower heads and stem are like italian thistle but the leaves are white veined, with furry white on the bottom as are the thorny leaf tips.

I can't say for sure about the hybridization part of your question, but hybridization is generally not all that common among distantly-related species. Particularly among "thistles" which actually includes several genera, not just multiple species. Although it doesn't quite fit the "furry" part or your description, when you note the white veins, this time of year I tend to think of blessed milkthistle (Silybum marianum) as a possibility since the varigation is so striking on that species.

there are weed seed in my garden soil, how can I kill the seeds from the soil?

In the garden context, you might consider using solarization which is the practice of heating the soil with solar radiant energy. Basically, you raise the temperature of the surface soil layers above temperature threshold that is lethal to weed seed and many other soilborne pests and pathogens.
