What is cold smoking? What oven temperature?

Cold smoking is when the temperature of the smoker is not adequate to cook the product. When the smoking is finished, I have found that the temperature of the bird is in the 90 degree range.  
When the smoking is finished the bird must be cooked by either oven or grill. Most sources quote 350-425 degrees.

I suppose that you could also finish by cooking it in a deep fat fryer. This takes 35-90 minutes depending on the turkey weight.

Cold smoking is a low temperature process something like dehydration without the airflow. After the turkey has been smoked the bird will be in the 90-100 degree range.  
Cold smoking of the turkey must be followed by thorough cooking.  
Most recipes recommend 325-350 degrees on temperatures.  
Check out High Roasting a butterflied turkey to shorten cooking time if you don't mind missing out on display carving your bird.  
This cuts the cooking time by almost 1/2.

BTW I wanted to clarify that my smoked bird looks nothing like the hunk of Turkey Jerky shown at the top of this post.  
Moist and succulent not dried like a raisin.
