I do much the same thing in the summer, but with a much less sophisticated process. We usually plant about 20 basil plants as we love pesto pasta. My wife freezes pesto all summer for winter soups and pesto pasta. Naturally as the summer progresses, the plants begin to bolt. When they get out of control, I take my hedge trimmer and chop them down to about half their size. Two weeks later, or so, we have nice fresh leaves.
