Borage has, in recent years, established itself as a cover crop of sorts in my orchard. It attracts lots of bees and looks gorgeous in spring. When it starts wilting, I use it as mulch around the trees.The hairy leaves interlock, when the herb is placed on the ground, so this mulch tends to stay in place nicely. While it's not one of my favorite greens to eat, I like the thought that even if all my greens were eaten by the birds, I would still be able to fall back on borage as a potherb.
