    Harvest the broccoli heads when they are full and tightly furled, before the flower buds open. Young small heads, stems, and leaves are also edible. If left on the plant too long, they will bolt, flower and go to seed, decreasing the flavor. If the temperatures become too high, the head will also bolt, flower and go to seed. After the main harvest, the plant will continue to produce heads from auxiliary shoots.
