What is the best way to preserve my summer garden harvest?  Beth W. Nipomo

Home canning can be fun and rewarding, as well as a cost-effective way to preserve the wonderful fruits and vegetables from the Central Coast's summer months.  Perhaps you're interested in knowing exactly what ingredients are in your food, or preserving your garden-fresh bounty?  If so, home canning may be right up your alley and attending the upcoming “Introduction to Canning” class is a great way to get started. Canning is a practical way to preserve foods for later consumption and extend the bounty of the growing season throughout the year. There are important guidelines that must be followed to ensure we produce a product safe for us to eat as well as enjoy. We should not underestimate the value of learning and using safe, tested, and quality methods of home canning.

The good news is that the University of California Cooperative Extension (UCCE) Master Food Preservers of San Luis Obispo and Santa Barbara Counties are offering an “Introduction to Canning” class on Saturday, September 9th.  This canning basics class will be offered as part of the UCCE's 2017 Saturday Preservation Class series and will highlight safe methods of preserving such as boiling water canning, steam canning, pressure canning, the differences between them, and when we should use each method. Any home food preserver will also want to learn the differences of low and high acid foods, how to select safe recipes, and where to find quality resources to help guide us as we put our new canning skills into practice.

“Introduction to Canning” takes place on Saturday, the 9th of September, 2017 from 10a.m. to 12p.m. at the UCCE Auditorium, 2156 Sierra Way, San Luis Obispo. If you're interested in learning more about canning, would like to meet others who are too, or would just like to see how it's done, this class is for you.
