La gente con frecuencia se queja de que los tomates que venden en las tiendas de abarrotes están muy duros y no tienen el sabor de antaño. Y creemos saber por qué – los millones de tomates que se cultivan en Estados Unidos y más allá deben ser pizcados antes de que maduren por completo para que puedan sobrevivir las largas distancias que son transportados. Más aún, muchos compradores guardan sus tomates en el refrigerador, lo cual destruye tanto su sabor como su textura.
La noticia es inesperada y alentadora, porque ahora los productores cuentan con la información genética que necesitan para crear las variedades modernas apropiadas para las cosechas a gran escala y su transportación, y mantener todo el sabor de las variedades más delicadas del tomate heirloom.
“Ahora que sabemos que algunas de las cualidades que la gente valora en los tomates heirloom pueden estar disponibles en otros tipos de tomates, los granjeros pueden tener acceso a variedades de tomates que se producen bien y que también cuentan con las características de color y sabor tan deseados”, señaló Powell.
Se toma un poco de tiempo reproducir una variedad de tomate, así que no espere disfrutar de los resultados a corto plazo. Pero el descubrimiento de Powell y su equipo es un importante primer paso. Los amantes de los tomates pueden dar gracias al Centro de Recursos para la Genética del Tomate C.M. Rick en UC Davis (C.M. Rick Tomato Genetics Resource Center at UC Davis), hogar de una vasta colección de tomates de especies mutantes y silvestres que aportan la diversidad genética que tanto científicos como productores necesitan para re recapturar el sabor de antaño.

Los chabacanos se cultivaron en el creciente fértil de Persia durante miles de años. Los colonos trajeron los chabacanos a Norteamérica, pero la mayor parte de la producción hoy día proviene de semilleros traídos por los frailes franciscanos quienes construyeron las misiones y trajeron una gran parte de la agricultura de España a California.
En años recientes he escuchado comentarios muy decepcionantes sobre la primera mordida a un chabacano fresco, y tuve la curiosidad de verificar con pomólogos de la Universidad de California y la Estación de Investigación Agrícola de USDA para saber qué progreso se ha hecho en cuanto a ofrecerles chabacanos con más sabor a los consumidores. Cinco diferentes pomólogos indicaron que los compradores de frutas y verduras de los supermercados tienden a valorar primero el color, tamaño y firmeza antes que el sabor de los chabacanos. Entre más temprano pueden los compradores obtenerlos en la tienda de abarrotes, mayor el valor que les dan, así que con frecuencia las frutas son cosechadas antes de que tengan la oportunidad de desarrollar su sabor. Todos los expertos con los que consulté dijeron que nunca han comprado chabacanos en ningún otro lugar que los mercados de granjeros y puestos al lado del camino.
Las variedades más comunes que se cultivan en California son la Patterson, Tilton y Apache, las cuales son seleccionadas por los agricultores por sus fechas de cosecha tempranas, tamaño grande, color atractivo, mayor vida en los anaqueles y porque se les puede usar tanto frescos como enlatados.
Tom Gradziel, un profesor de genética y producción de especies Prunus de UC Davis, señaló que “en el Valle Central, la mayoría de los chabacanos son procesados. Por lo que un chabacano de uso dual en el mercado (de procesamiento o frutas frescas) como el Patterson es con frecuencia el preferido. Tiene color, tamaño y firmeza excelentes, pero sabe a cartón".
Las variedades que los pomólogos incluyeron en su lista de favoritos son Royal Blenheim, Robada, Katy, Primarosa y Derby. Craig Ledbetter, un genetista que trabaja en la producción de chabacanos en el Centro Parlier de Investigación Agrícola del USDA, indicó que “escuchamos mucho sobre el sabor, pero no creo que el sabor es algo que encontrará en las tiendas de abarrotes a no ser que sea en forma de fruta demasiado madura. Aquí buscamos un balance entre azúcar y ácido. Tenemos muchas selecciones de producción que saben absolutamente fabulosas, pero son un poco más pequeñas que lo que desean los agricultores. Honestamente, no quieren ni siquiera mirar a la “fruta pequeña”. ¡Es una lástima!”
Cómo comprar chabacanos. Los chabacanos no desarrollan un mejor sabor después de que se les pizca, así que elija aquellos que están completamente amarillos o de color naranja intenso. El aroma suave y dulce del chabacano es un buen indicador de que su interior sabrá igual de bueno.
Cómo guardar los chabacanos. Manténgalos en la mesa o mostrador de la cocina si se los va a comer en dos o tres días; sino, guarde los chabacanos maduros en el refrigerador en una bolsa plástica con orificios.
Para disfrutar los chabacanos. Los chabacanos tienen una semilla en el centro separada de la pulpa. Después de lavarlos, córtelos a la mitad a lo largo de la línea y retire la semilla. Disfrute la fruta entera, o prepárela en tartas, panes, jaleas, glaseados para carnes, salsas o séquelos en un deshidratador.
Tarta de chabacano
Masa.
1 ¼ tazas de harina regular
½ cucharadita de sal
1 cucharada de azúcar granulada
½ cucharadita de saborizante de almendra (opcional)
½ taza de mantequilla sin sal, fría
2 cucharadas de agua fría
Use una batidora para masa para mezclar la harina y la azúcar, agregue la mantequilla hasta que la masa forme migajas gruesas. Agréguele el agua hasta que la masa deje de desmoronarse cuando se le pinche; no la revuelva demasiado. Tome un pedazo de envoltura de plástico, forme una bola con la masa y envuélvala en él. Refrigere durante 60 minutos. Remueva el plástico y coloque la masa en una superficie ligeramente enharinada, extienda la masa en un circulo de 12 a 14 pulgadas. Colóquela en una charola para hornear cubierta con papel de hornear y vuélvalo a meter al refrigerador mientras prepara el relleno de chabacanos.
½ taza de azúcar granulada (o menos si los chabacanos están dulces)
1 cucharada de fécula o almidón de maíz
Una pizca de sal
1 ½ libra (o 10 medianos a grandes) de chabacanos frescos, sin semilla y cortados en rebanadas de ¼ de pulgada
Coloque el azúcar, fécula de maíz y sal en un tazón y revuelva bien, agregue los chabacanos y revuelva suavemente.
Retire la masa del refrigerador, coloque el relleno de chabacanos en el centro dejando un borde de dos pulgadas alrededor. Doble suavemente la masa sobre los chabacanos y pellizque los dobleces para formar una tarta redonda. Selle cualquier abertura en los lados y parte baja de la masa para evitar que el jugo gotee en la charola de hornear. Deje la fruta expuesta en el centro de la masa. Si desea, puede espolvorear con un puñado de almendras finamente picadas.
Hornee a 375º F durante 40 a 45 minutos, o hasta que se dore.
Es muy sabroso si se sirve con helado de vainilla.

Soy un poco lenta en eso de la moda del EVOO. En diciembre, luego de corregir el artículo Growing Bigger, Better: Artisan Olive Oil Comes of Age, para el nuevo ejemplar de California Agriculture, compré una botella para mi pareja y al día siguiente escuché a un comediante de televisión bromear acerca de quienes compran botellas de aceite de oliva, por $60, como regalos navideños. (Me hizo sentir que era una tacaña –¡No había gastado tal cantidad!).
Pero la botella negra y delgada del December's New Oil, producido por Katz and Company de Napa Valley, se veía tan fabulosa que decidí comenzar a aprender el léxico del aceite de oliva extra virgen (EVOO, por sus siglas en inglés). ¿Tenía la certeza de sus matices que evocan un sabor a grama, cremoso, picante y mordaz? Sin duda era verde. Esta semana Albert Katz me dijo el porqué: "Es la clorofila en el aceite; se encuentra en mayor cantidad en el olio nuovo", dijo.
Cuando se muelen las primeras aceitunas, aun verdes, en noviembre, un fuerte olor a verdor invade el molino, explicó él. Lo molido huele como alcachofa fresca, y aun a perejil, pero predominantemente como grama. Katz ha estado tanto tiempo en el negocio que cuando agarra una brizna de grama recién podada mira a su alrededor para ver si alguien ha estado moliendo aceitunas.
¡Caray! Katz sólo vende el aceite que produce en diciembre, así que es demasiado tarde. La producción limitada y el corto período de venta del olio nuovo, en el que se celebra la primera molienda, es una tradición en las principales regiones productoras del mundo, incluyendo el norte de Italia, donde se origina el nombre del aceite; siempre sin filtrar, turbio y lo más primitivo posible. Katz lo describe como "la mordacidad de la juventud".Esta semana la temporada llega a su fin. McEnvoy Ranch tiene a la venta botellas de su olio nuovo en su tienda en San Francisco Ferry Building y en la Internet este fin de semana (6 de febrero). El olio nuovo de McEnvoy es verde, robusto y picante –picante significa que deja un ligero ardor en la garganta, lo que es una cualidad deseada. (Amargo es algo distinto, se siente en la lengua). Como todo olio nuovo, el nuevo aceite de McEnvoy tiene sedimento en el fondo de la botella y consistencia empalagosa, que es también una cualidad deseable, una ligera sensación a tierra y espesa en la boca.
Con el fin de la temporada del olio nuovo llega la disponibilidad de los aceites que se han almacenado por un par de meses; ya están cambiando – más suaves, más dorados – y el sedimento se queda en los tanques de almacenaje. A medida que maduran entre la primavera y el verano, tendrán un sabor más cremoso.
El clima afecta el sabor del aceite de oliva. "Terroir" es como se le llaman a estos factores, explican Paul Vossen y Alexandra Kicenik Devarenne en el artículo de California Agricultue acerca de las cualidades sensoriales de los aceites de oliva. Katz encuentra algo de redondez y suavidad en su aceite este año, como resultado del verano fresco y la cosecha tardía.
Diferentes variedades de olivos producen marcadas diferencias en los compuestos aromáticos. Las variedades toscanas, cultivadas por Katz y McEnvoy Ranch, tienen perfiles de aromas robustos (enteros, picantes, complejos). A unas cuantas tiendas luego del San Francisco Ferry Building, Stonehouse vende su más ligero EVOO, extraído de variedades españolas de aceitunas misión, manzanilla, sevillana, ascolana y arbequina. El aceite de Stonehouse no es picante, no deja ardor en la garganta.
La semana pasada, Katz puso a la venta sus aceites principales para el 2011: Chef's Pick Organic Extra Virgin y Hill Ranch Extra Virgen. Rock Hill no sabe como el olio nuovo, por que una buena proporción de las aceitunas usadas son Taggiasca y no se cosecharon sino hasta después de producirse el olio nuovo. Chef's Pick, sin embargo, tiene el mismo perfil, dice Katz. Ahora que conozco un poco del lenguaje creo que voy a investigar un poco más y comprar una botella antes de que se agote la mercancía. Si me espero hasta el verano, me dicen que ya no tendrá el verdor y el matiz a grama se tornará más herboso.

Un artículo publicado recientemente en el Food Blog y el Blog de Alimentos respecto a un nuevo enfoque de investigación que tiene como objetivo mejorar el sabor de las frutas y verduras disponibles en los mercados de los Estados Unidos provocó una respuesta desdeñosa de un lector.
“A quien corresponda”, inicia la carta del remitente, “Me parece vergonzoso que estén gastando 6 millones de dólares en algo que cualquier estudiante de tercer año de primaria debería saber”.
Y continua el remitente: “Es prácticamente imposible mejorar el sabor de un tomate comercial porque en los cultivos realizados por la agricultura industrial se ha sacrificado el sabor en favor a la resistencia a las enfermedades y la caducidad. Yo puedo recoger un tomate verde de mi huerto casero y dejarlo a temperatura ambiente hasta que madure y tendrá un sabor delicioso. Este no será nunca el caso con la mayoría de los híbridos desarrollados durante los últimos 20 años porque el sabor NO es la prioridad. No es posible agregar el sabor bajo estas circunstancias”.
La especialista de Extensión Cooperativa, Beth Mitcham directora del Centro de Tecnología de Postcosecha de la UC, escribió la siguiente respuesta:
“Estoy de acuerdo con una parte de su comentario, pero no completamente. Es cierto que los productores se han enfocado por muchos años en la productividad, la resistencia a las enfermedades y a favor de un mayor periodo de caducidad. Sin embargo, en los últimos años, los productores están poniendo más atención en la calidad del sabor. Tal y como usted lo ha mencionado, usted puede tener un tomate verde y éste puede madurar con excelente sabor. Yo también he hecho esto con tomates cultivados con fines comerciales”.
“El problema con los tomates que se cortan aún verdes y que maduran después de cosecharse es que la fruta está expuesta a bajas temperaturas. Los estudios han demostrado que en tomates que han estado expuestos por tan solo 24 horas a temperaturas de 50 grados se les reducen los componentes del sabor a la mitad. Y la mayoría de los tomates son transportados a temperaturas entre 45 y 50 grados para evitar que se magullen o pudran. Otro problema con los tomates verdes y muchas otras frutas es la madurez de la fruta al momento de cosecharla. Entre más temprano se cosecha la fruta, menos compuestos del sabor producirá cuando esté completamente madura.
“Esta subvención de 6 millones está enfocada en proveer a los productores y empacadores con herramientas que les ayudarán a cosechar con éxito frutas y verduras más maduras y distribuirlas a los consumidores con un buen sabor. Estamos perfeccionando tecnologías para clasificar la fruta por su madurez y así eliminar la que aún no está madura o la que se ha pasado de madurez antes de enviarlas a su destino; queremos además mejorar el empaque para prevenir que la fruta se magulle o que madure excesivamente durante la transportación; estamos buscando métodos que ayuden a frenar el proceso de maduración de la fruta ya madura después de la cosecha y que nos permita trasladarla a temperaturas más altas para que el sabor no se pierda.
"Si bien es cierto que usted puede siempre obtener el mejor sabor cuando recoge la fruta o la verdura madura de la planta y se la come el mismo día, muchos consumidores estadounidenses no tienen acceso a estos productos y la mayoría no pueden disfrutar de frutas y verduras a lo largo del año. Por otra parte, si bien los consumidores reconocen que las frutas y verduras son buenas para ellos, lo cierto es que sólo están comiendo entre 2 y 3 porciones por día (incluyendo las papas fritas) a diferencia de las 5 a 9 porciones que es lo recomendable. Pensamos que un sabor mediocre contribuye al bajo consumo. Nuestra meta es mejorar la calidad del sabor de las frutas y verduras que están disponibles en los mercados de su comunidad para que todos los consumidores coman más y ojalá se pueda lograr la meta de 5 al Día que es algo bueno para conservar la salud”.

Mmmmmm… pizza de peperoni y champiñones. Papas fritas. El unami es, según resultados de estudios científicos de los años 80, reconocido oficialmente como un legítimo quinto sabor primario, uniéndose a los bien conocidos sabores dulce, agrio, salado y amargo.
Es difícil describir al unami con sólo una palabra; cubre la lengua con una grata, satisfactoria y deliciosa sensación. Y por tratarse de un sabor complejo - impartido por el glutamato, un tipo de aminoácido, y ribonucleótidos, incluidos inosinato y guanilato, presentes de manera natural en muchos alimentos incluyendo la carne roja, pescado, verduras y productos lácteos – el sabor se mezcla y complementa bien otros sabores. De ahí que sea difícil describir el delicioso sabor del caldo de pollo.
El unami es un concepto relativamente nuevo para los estadounidenses, pero este sabor se ha conocido por más de 100 años en algunas partes de Europa y Japón, donde al químico Kikunae Ikeda se le atribuye haber identificado tal sabor. Ikeda analizó los ingredientes activos de un concentrado de kelp, un tipo de alga marina que es alimento básico en la cocina japonesa, y descubrió que el sabor deleitable está asociado con el glutamato. El glutamato se encuentra también en otros alimentos sabrosos, incluso los que se usan en la cocina occidental como tomates, champiñones, espárragos, quesos y carnes.
Ikeka desarrolló y patentó luego un método para
elaborar glutamato monosódico, o MSG, un
aditivo procesado que añade el sabor de umami
a la comida, muy semejante al endulzamiento
que produce el azúcar. En este país, el MSG no
goza de mucha simpatía. Hay tantas discusiones en contra de su uso como las hay a
favor de usarlo como dar sabor a las comidas.
Hanne Siversten, especialista del Departamento
de Ciencia y Tecnología de los Alimentos de UC
Davis, explica: "El MSG no tiene mucho sabor
por sí solo, pero añadido a las comidas muestra
efectos sinérgicos. Esto significa que surge un
nuevo sabor, una reacción entre el MSG y la comida misma".
El sabor del umani tiene un efecto muy similar. Y debido a que es algo que se manifiesta de manera natural en compuestos que se encuentran en muchos alimentos, uno no tiene que agregar MSG para explicarse el sabor. Probablemente usted consume comidas ricas en umani diariamente. ¿A quién no le gusta su salsa para espagueti con un poco de queso parmesano? ¿O queso y tocino en su hamburguesa? Estas combinaciones levantan el sabor total de esos alimentos.
