This week on In the Garden with UC Master Gardeners is Part 2 on the subject of preserving the harvest. With and without refrigeration!
UC Master Gardener and KUCI Staff Host Katrina Kirkeby will continue her talk with Ernest Miller from last week. There are ways to retain a lot of the nutritional benefits of fresh-picked fruits and vegetables through proper preservation techniques such as dehydrating.
Use the sun itself or your own oven. Fruit leathers (“rollups”)! Make your own fresh and flavorful garlic and onion powder! Tomatoes are a large focus of this program. Learn how to do it SAFELY! Use only USDA‑approved recipes to ensure you will have a safe product. Acidification, even with tomatoes, is critical. Listen to Katrina and Ernest expand upon what was discussed last week in much more detail.
