I have been doing this for years and the sweetness of the carrots caused by light frost is unreal . One problem I have at this time of year are the small birds that seem to migrate back to my garden every October . They will eat the sprouting carrots so I have to place a net over them for protection .

Thanks for your comment Joe. It is true that the sweetness is impossible to describe to someone who has not tried it. The birds are probably white crown sparrows, which like to stop in at various garden "salad bars" to help themselves. Netting or small cages can help keep them out. Best of luck!
