Delish! I need a couple of friends to come over and play cuz I've got some oranges, blood oranges, lemons and grapefruit that would do quite nicely in marmalades!!

My Nichols Canyon Co-op has been making lots of marmalades, and one of our most popular is the Meyer Lemon Ginger marmalade. Using the natural pectin in those lovely lemons and less sugar, this is a bit labor-intensive the first time you make it, but with 2 or 3 people in the kitchen, this comes together very rapidly. Check it out at the Nichols Canyon Co-op web site. I also have posted the recipe on -- http://www.food.com/recipe/lls-meyer-lemon-ginger-marmalade-460943. And if you are interested in forming a Co-op in your community, contact me, I am happy to help. http://nicholscanyonco-op.com/
