Arugula grows best in the cool season, so plant it in late fall or early spring. It can withstand light frosts. Arugula may bolt (go to flower) quickly, especially during warm spells. It will resow if allowed to go to seed.

 Planting

  • Direct seed in March to May or in August to October; possibly in February, June, or November depending on weather and local conditions.
  • Transplant in February to May or September to October; possibly in June, August, and November depending on weather and local conditions.
  • If growing your own seedlings, start the seeds 4 weeks before you want to plant.

Harvesting

  • Individual leaves are ready to pick 6 to 7 weeks after germination.
  • Younger plants have milder tasting leaves. If you prefer the milder leaves, seed new plants every couple of weeks to maintain a continuous supply of young plants.

Recommended varieties for Santa Clara County*

Arugula Italian, OPDelicious salad greens with deep, spicy flavor. Will resow if allowed to go to seed. Flowers are edible too. 8 to 10 inches tall (taller if allowed to flower). Plant 3 to 6 inches apart.
