Learn safe ways to preserve peaches, plums, and apricots with fruit butters, compotes, BBQ sauce, and more.

Go beyond jam and discover creative, research-based ways to preserve summer stone fruit at home. In this one-hour online class, participants will explore safe methods for preserving peaches, plums, and apricots through fruit butters, compotes, sauces, and more.

The class will cover several flavorful approaches to stone fruit preservation, including fruit butter, a plum compote, apricot halves, and a savory-sweet apricot BBQ sauce. Participants will also learn about additional preservation options such as drying and fruit leather, along with guidance on selecting appropriate preservation methods for different recipes and uses.

Beginners are welcome, and no prior food preservation experience is required.
