Blueberry Peach Jam

Blueberry Peach Jam (no pectin)
This jam makes a perfect pairing with cheese or topped on yogurt or ice cream.
Makes: ~ 6 - 7 half-pint jars
Prep: 30 minutes
Processing Time: 5 Minutes

INGREDIENTS:
• 4 cups chopped peaches (~4 lbs peaches)
• 4 cups blueberries (~1 quart fresh blueberries or 2 ten-ounce
packages of unsweetened, frozen blueberries)
• 2 Tbsp bottled lemon juice
• ½ cup water
• 5 ½ cups granulated sugar
• ½ tsp salt
• 1 stick cinnamon
• ½ tsp whole cloves
• ¼ tsp whole allspice

DIRECTIONS:
Prep:
• Prepare boiling water canner.
• Canning jars must be sterilized. Sterilize canning jars in boiling water; keep hot until ready for use.
Wash lids in warm soapy water and set bands aside.
• Sort and wash fully ripe peaches; peel and remove pits. Chop peaches.
• Sort, wash and remove any stems from fresh blueberries. Thaw frozen berries.
Cook:
• Measure fruits into a stainless-steel pot; add lemon juice and water. Cover and bring to a boil and
simmer for 10 minutes, stirring occasionally.
• Add sugar and salt; stir well.
• Add spices tied in cheesecloth. Boil rapidly, stirring constantly, to 9 degrees F above the boiling point of
water, or until the mixture thickens. Remove from heat; take out spices. Skim.
Can:
• Fill hot jam immediately into hot, sterile jars, leaving ¼ inch headspace. Remove air bubbles. Wipe
jar rim. Center lid on jar and apply band, adjust to fingertip tight. Repeat until all jars are filled.
• Place jars in canner. Water must cover jars by 1 inch. Cover canner and bring water to a boil.
Process jars 5 minutes, adjusting for altitude. Turn off heat and remove canner lid. Let jars sit for 5
minutes. Remove jars from canner; do not retighten bands if loose. Cool 12-24 hours. Check lids
for seal, they should not flex when center is pressed. Remove rings and label jars. Store in a cool,
dark place.
