Shirley C. Salado
Community Education Supervisor 2

As Program Supervisor for the Expanded Food and Nutrition Education Program (EFNEP) in the San Diego area, I lead the nation’s first nutrition education initiative dedicated to reducing nutrition insecurity among low-income families and youth. My academic background includes a Bachelor of Science in Dietetics and Food Administration and a Master of Business Administration, which together inform my approach to program leadership, community engagement, and strategic growth.

I have proudly served on the UC ANR Local Staff Assembly Council for five years, working to amplify staff voices across the system. Since 2023, I have served as an ANR Delegate to the Council of UC Staff Assemblies (CUCSA), where I remain deeply committed to strengthening collaboration between CUCSA and ANR to support and advance all staff members.

As a Principal Investigator, I was awarded a $121,000 grant to establish the University of California Master Food Preserver Program in San Diego County. The program launched with 12 volunteers to meet initial grant objectives and has grown to 40 volunteers as of 2026, expanding its reach and community impact.

The UC Master Food Preserver Program’s mission is to keep Californians safe and well by delivering research-based education on home food safety and preservation. Through culturally responsive, evidence-based practices, the program empowers community members to safely preserve food, reduce waste, increase food security, and explore nutritious food options.
