Placer-Nevada wins Healthy over the Holidays group challenge

Congratulations to Placer-Nevada UC Cooperative Extension. The office's Staff Assembly Ambassador, Annette Cosgrove, submitted the winning entry to the Healthy over the Holiday's photo contest.

Cosgrove led the staff and academics at Placer and Nevada UCCE in taking five group walks, two Zumba sessions, a holiday party using reusable utensils and a hallway chair race on a rainy day. The prize is an assortment of California-grown healthy goodies from Circle K Country Store in Fowler.

First runner-up in the contest was a photo collage of members of the Houston Wilson lab at the UC Kearney Agricultural Research and Extension Center. Staff research associate Jessia Maccaro (pictured in the lower left corner of the photo collage) leads staff in a daily yoga practice in the winter to get everyone in the right frame of mind for working together inside the lab.

"Healthy over the Holidays was designed to remind us that wellness should encompass all pieces of our lives from mindfulness practices to dedicating time for meaningful relationships,” said Kaela Plank, chair of the UC ANR Staff Assembly wellness committee. “The feedback we have received from this year's program has been overwhelmingly positive. Our committee is excited to continue to improve this program in order to meet the needs of the ANR community.”

Individual participants took home prizes, while all 168 UC ANR staff who signed up to be Healthy over the Holidays were winners. They received weekly emails with encouragement to eat healthy, get physical activity and take care of their mental health during a time when many people set their health goals aside until the New Year.

Almost half of the participants submitted the completion survey. Of those, 87% reported making one positive change – such as practicing mindfulness, making time for their hobbies, choosing to eat more fruits and vegetables, and getting more sleep. Seventy-four percent of respondents said they enjoyed the holistic approach and 72% enjoyed the newsletter. One office has committed to continuing their weekly walks in 2020. 

The individual winners of Healthy over the Holidays were picked randomly from the participants who filled out the completion survey. Javier Miramontes and Keilani Cordero won Fitbits and Elizabeth Gong won a bamboo cutting board.

Healthy Snack Day winners show their creativity

Thanks to all who participated in Healthy Snack Day 2019! The Wellness committee was very impressed with the level of creativity sites brought to this event.

Many of you enjoyed local fruits and vegetables from your home gardens and even gardens at your sites (shout out to Placer and Nevada Counties, Kearney REC, UCCE Orange County, and South Coast REC).

Other sites used Healthy Snack Day as an opportunity to connect with other departments in their building and to test out recipes for future community nutrition classes. Great ideas!

We were so excited to hear that you all are using this team building opportunity in creative ways and we are thrilled to announce the winners for both the photo and recipe competitions.

We had 13 sites participate in the photo competition and three sites in the recipe competition.

Photo competition winners are as follows:

First place: Kearney REC

Second Place, UCCE Contra Costa

UCCE Contra Costa won second place.

Third Place: UCCE Humboldt-Del Norte

Spicy and crispy garbonzos

Ingredients

1 cup dried garbanzos, soak overnight then cook until tender. Lay on paper towels to dry
4 T olive oil
Maldon salt
Thyme leaves
Spanish paprika

Directions

Preheat oven to 400 degrees F.

Toss the cooked garbanzos with olive oil. Put on a cooksheet in a single layer and bake until brown and crispy in oven.

Toss with a touch more olive oil, thyme, salt and Spanish paprika. 

Second place: the Nutrition Policy Institute for their radish cucumber salad recipe.

  • cucumber (about 2 cups)
  • 1 bunch radishes (about 2 cups)
  • 1/8 red onion (about 1/4 cup)
  • 3 tablespoons fresh dill
  • 1 can (15oz) chickpeas
  • 1 – 2 tablespoons olive oil
  • 4 tablespoons apple cider vinegar
  • 1/2 teaspoon mineral salt, or to taste
  • freshly cracked pepper, to taste

TIPS FOR THE BEST CUCUMBER RADISH SALAD

Use the freshest ingredients possible. With only a few ingredients in this radish cucumber salad, try to source the best and freshest possible. Use your favorite kind of radishes and cucumbers.

Prepping tips: If your cucumbers and radishes are the wider side cut them into half moon shapes. It makes it a little easier to eat. But if they are thinner side leave them in whole circles if you like. No need to peel the cucumbers, the skin adds fiber and nutrition.

Use as much dill as you like. For myself, the more the merrier – it's such a refreshing herb!

Season well: Use plenty of salt and as much pepper as you like. The radishes are peppery, but once the salad is mixed all together, they aren't as noticeable, so a little extra pepper is nice.

Planning on making your radish and cucumber salad ahead? Keep the cider dressing separate from the salad until ready to serve. The zucchini and radishes will soak up the dressing and start to soften and pickle. It's not a bad thing, but if you prefer a crisp presentation mix the salad with the dressing just before setting on the table. It won't hurt to mix up to 15 minutes ahead of time.

HOW TO MAKE RADISH AND CUCUMBER SALAD

  1. Wash the cucumber and radishes well, scrubbing as necessary.
  2. Trim the ends from the cucumber and radishes and thinly slice, using a knife or mandoline.
  3. Drain and rinse the chickpeas.
  4. Add the cucumber, radish, chickpea, dill, apple cider vinegar, oil, salt and pepper to a large mixing bowl, toss well to coat.

And all that's left is to enjoy as is or chill before eating. Enjoy!

HOW TO STORE LEFTOVERS

Leftovers can be stored in the refrigerator for up to 4 – 5 days in a covered container.

Third place: UCCE San Joaquin for their Fruit Pico de Gallo recipe.

Ingredients

1 cup peeled and chopped fresh mango
1 cup chopped fresh watermelon
1 cup chopped fresh pineapple or canned pineapple in 100% juice
1 cup peeled and chopped fresh papaya
1 cup peeled and chopped jicama
Juice from 1 lime
1 teaspoon chili powder

Preparation

Mix together all the fruit in a medium bowl and sprinkle with lime juice and chili powder. Serve immediately.

Congratulations to all six site winners! We hope that the first prize winners enjoy their healthy snack boxes, the second place winners feel refreshed when using their spa water container and recipe book prize and the third place winners use their apple slicers for years to come.

UC ANR staff: Snack healthy on Aug. 29 and win a prize for your office

The UC ANR Staff Assembly's new Wellness Committee is sponsoring its first activity on Healthy Snack Day, Aug. 29. Healthy Snack Day is a statewide day of action led by the Champions for Change Program of the California Department of Public Health.

Many UC Cooperative Extension food educators are planning activities with their clientele Aug. 29 to promote the benefits of eating nutritious foods at snack time, and the Wellness Committee is bringing the celebration to UC ANR staff by sponsoring a healthy competition.

A 'spa water' dispenser will be awarded to the office which submits the best photo of its Healthy Snack Day celebration.
The Wellness Committee has asked UC ANR Staff Assembly Ambassadors to coordinate a breaktime healthy snack event at their local facilities. All staff can share their snacks on social media using the hashtag #SnackHealthyUCANR. To win, each ambassador can submit his or her location's best photo. The Wellness Committee will select a winner to receive a dispenser for infused water for the facility.

PAC discusses strategic plan and urban agriculture

At the recent President’s Advisory Commission meeting, President Napolitano praised UC ANR’s work in “areas of critical importance.”

Downtown Oakland was the site of the biannual UC President's Advisory Commission on Agriculture and Natural Resources (PAC) meeting on Aug. 9, which included a Q&A session with President Napolitano, program presentations from UC Cooperative Extension county directors Rob Bennaton and Igor Lacan, and updates from deans Helene Dillard (UC Davis), Keith Gilless (UC Berkeley) and Kathryn Uhrich (UC Riverside), as well as Executive Associate Dean John Pascoe (filling in for Dean Michael Lairmore, UC Davis School of Veterinary Medicine). 

In her opening remarks, UC ANR Vice President Glenda Humiston introduced Mark Bell, the division's new vice provost for statewide programs and strategic initiatives. Bell spoke about the strength of the UC system, the diversity of programs offered by UC ANR statewide, and his plans to leverage the strong volunteer and staff base of programs like UC Master Gardeners and 4-H.

Humiston also offered updates on the division's strategic plan and the significant progress made in implementing its key goals. Associate Vice President Tu Tran then gave a presentation on the division's financial situation, which he titled “A Fiscal Plan for Success.” Tran addressed UC ANR's place in the state budget and its revenue projections through FY 2021-22, which includes significant growth in major gifts and fundraising.

Bennaton and Lacan both gave spirited and enthusiastic presentations that were received well. Bennaton, who serves as county director for Alameda and Contra Costa counties as well as UCCE urban agriculture advisor for the Bay Area, discussed the benefits of urban agriculture and the assortment of activities going on in community development, habitat restoration and youth programming.

Lacan, also a UCCE environmental horticulture advisor for the Bay Area and co-director in San Mateo and San Francisco counties, talked about the diverse and richly rewarding work he spearheads in urban forestry. His work currently focuses on sustainable management of urban trees and urban water.

Following lunch, UC President Napolitano offered glowing remarks about UC ANR's contributions and the long-term strategy reflected in the division's new strategic plan. She said she was particularly impressed by ANR's recent work in water, childhood obesity, nutrition education, and Asian citrus psyllid, calling them “areas of critical importance.” She also praised Humiston's leadership in the area of tech innovation and partnerships.

During a Q&A period, the president engaged PAC members on various issues such as potential public-private partnerships that could involve UC ANR, targeted approaches to advocacy and deferred maintenance needs for UC writ large but also for UC ANR and its research and extension centers system, specifically.

The deans gave updates on research and activities occurring at their respective colleges and school.

The next PAC meeting is scheduled for December, also in Oakland.

Travel funds available for UCCE specialists, AES faculty to collaborate with off-campus ANR academics

ANR will be making additional travel support available for UC Cooperative Extension specialists to collaborate with ANR academics off-campus, including UCCE advisors in the counties and ANR academics at the RECs in fiscal year 2017/18.

With the level of funds available, each specialist may apply for up to $2,500 for FY 2017/18 (travel reports must be submitted within 45 days of travel, and funds must be expended by June 30, 2018). These travel funds must be utilized by the UCCE specialists only and cannot be used for out-of-state travel.

UC ANR values the work of AES faculty across the three partner campuses. As the recognized lead for the California Agriculture Experiment Station, UC ANR receives federal Hatch funds to support the AES mission and distributes those funds to the three partner campuses to manage and support AES faculty. In recognition of the importance of the partnership between UC ANR academics and AES faculty, UC ANR is expanding the travel support program to include AES faculty as part of a pilot program. Upon completion of a request, UC ANR will support travel by AES faculty to meet and work with UC ANR county-based or REC-based academics. Support is limited to $1,000 per AES faculty member with a cap on the total pool of funds available set at $25,000 for FY17-18. Additional support may be available through the campuses; AES faculty should consult their departments or colleges to determine if additional support is available. Travel support must be used by the AES faculty member for his/her own travel to plan and execute research or present research findings at meetings hosted by UC ANR academics.

There is no deadline for applications for these travel funds, but they must be expended in the fiscal year 2017/18.
