Dr. Steve Jones of WSU Bread Lab: "Bread, Chromosomes, and Community" Seminar

 

Dr. Steve Jones will be leading our Fourth Tuesday seminar on May 24, 2016 from 12-1:30 PM in PES 3001. Dr. Jones is a professor in the Department of Crop and Soil Sciences at WSU and director of the Washington State University Bread Lab. His talk is titled, "Bread, Chromosomes, and Community."

The Bread Lab at Washington State University breeds wheat for local systems outside of the commodity market. By working with local millers, bakers, maltsters, brewers, distillers and chefs the lab can experiment with wheats and other grains that don’t fit an industrial model but do keep value where it is produced – in regional communities. Nutrition, flavor, and functionality are targets of the breeding program but the varieties developed must first work for the farmer.
