One-Pot Black Beans
One-Pot Black Beans
Drain the beans and/or rinse with water
Add 1 tablespoon of oil to pot
Add 1/2 cup chopped onions
Add minced garlic
1/4 teaspoon of cumin
Cook until soft
Add 1 can drained beans and add 1/4 cup broth. Simmer 15-20 minutes or until sauce thickens.
Served with cilantro lime brown rice
Instructions
1. Heat oil in pot over medium-heat. Add onions, garlic, and cumin.
2. Sautee until soft.
3. Add black beans and broth
4. Reduce the heat to a simmer and cover the pot. Let it cook for 15 to 20 minutes or until sauce thickens.
