Sweet Potato Tomato Soup
Sweet Potato Tomato Soup
2 sweet potatoes (washed and peeled)
Sweet potatoes and 1/2 of a large onion (diced)
Drizzle olive oil in a heated pot.
Add sweet potatoes and onions
Cook until golden brown, about 10 minutes
Add 1 cup of low-sodium chicken broth
Add 1 cup of water
Add 1/2 a can of tomato sauce
Bring so a slow boil then reduce heat and simmer for 20 minutes.
Pour contents into a blender and blend until smooth. Optional: Add milk to reach desired consistency.
1 cup portion.
