Turkey Chili
Turkey Chili
1 medium onion (chopped), 1 clove garlic (minced), 1/2 red bell pepper (diced), 1 stalk celery (diced), 1 can kidney beans (rinsed and drained)
Over medium heat, brown 1/2 pound (8 oz) ground turkey.
Add in onions, garlic, bell peppers, and celery. Cook until soft.
Add 1 1/2 tablespoons of chili powder
Add 1 1/4 teaspoons of cumin
Add 1 cup of chicken or vegetable stock/broth.
Add in diced tomatoes. Bring to a boil, then simmer for 15 minutes, stirring occasionally.
Add in kidney beans. Simmer for 10 minutes. Stir occasionally.
1 cup portion, topped with cheese (optional)
Optional: Salt and pepper (to taste), shredded cheese on top
