Biography

Moshe Rosenberg, D.Sc. is a Professor and Specialist in the Department of Food Science and Technology at UC Davis. He received his B.Sc. from the Hebrew University, Jerusalem, Israel and his M.Sc. and D.Sc, in Food Engineering and Biotechnology, from the Technion, Israel Institute of Technology, Haifa, Israel. His research focuses on developing new understanding about the physico-chemical and microencapsulating properties of proteins, lipids and carbohydrates and on developing advanced, highly functional delivery systems for nutrients and bio-active compounds. His research is also aimed at gaining a better understanding regarding the physico-chemical principals that govern: milk processability, functionality of milk constituents, and the development of quality attributes of cheese and other dairy products.
