Pomegranate (Punica granatum) is a wonderful seasonal fruit that is available fresh in the late summer to early autumn. This is the perfect time to capture and preserve their essence in the form of frozen arils, frozen pomegranate juice, or by making pomegranate molasses, a rich, tangy syrup made from pomegranate juice.
