Photo Information The flower heads of Eryngium/Sea Holly change so much in color and texture as the flowers mature that one plant looks almost like a mixed bouquet.

Description This photo was taken in my garden on May 8, 2017. I find Sea Holly both beautiful and fascinating. I love how the color of the small spherical flower heads changes from green to violet-blue, with both colors appearing on the plant at the same time. Also intriguing is the way the arrangement of the tiny stemless flowers gives the umbels the appearance of a surface texture, and this texture changes as the flowers mature. The dark green basal leaves are a fitting base, working like a floral frog to hold the airy stems in place.
