My name is Angelita Zaragoza, and I’m here with UC Cooperative Extension. We’re here today teaching nutrition to the parents of Ted C. Wills. The tofu dish that we did today contained red bell peppers, broccoli, snap peas, tofu, and of course, the brown rice, which first of all, we cook the rice beforehand.
Once that is done we take all the ingredients, all the vegetables, and we make sure to chop that up and dice it, and make sure that’s ready. Once that’s done, we take the tofu, we cut it into cubes, and once the skillet is warm, we go ahead and put that in there with a little bit of oil just to cover the top of the skillet.
We go ahead and put in the tofu and let that brown and then we add in all of the ingredients, meaning the vegetables. Once that is nice and soft, then we add the rice. And we also put in a little bit of soy sauce to add flavor and also some chicken broth.
