This week on In the Garden with UC Master Gardeners is Part 2 about preserving the harvest. With and without refrigeration! UC Master Gardener and KUCI Staff Host Katrina Kirkeby will continue her talk with Ernest Miller from two weeks ago.
Here are ways to retain a lot of the nutritional benefits of fresh-picked fruits and vegetables through proper preservation techniques such as dehydrating. Use the sun itself or your own oven. Fruit leathers (“rollups”)! Make your own fresh and flavorful garlic and onion powder!
Tomatoes are a large focus of this program. Learn how to do it SAFELY! Use only USDA?approved recipes to ensure you will have a safe product. Acidification, even with tomatoes, is critical. If you missed Part 1, it can be found in the UCCE Master Gardeners of Orange County webpage
