Casi todas las granadas cultivadas en Estados Unidos pertenecen a una variedad: la wonderful. John Chater, un estudiante de doctorado de la Universidad de California en Riverside, desea cambiar eso.
A él le gustaría ampliar la variedad de granadas disponibles para que alguien que va al supermercado pueda, como con las manzanas, comprar variedades de granadas que varíen en dulzura, dureza de las semillas, sabor y color.
Con ello en mente, Chater ha dedicado los últimos cuatro años a investigar el potencial comercial de 13 variedades de granadas y a producir nuevos tipos.
El experto cuenta con pruebas de campo en Riverside y Somis, justo al este de Ventura, para poder evaluar la diferencia entre los climas costero y desértico. También analiza el jugo de las diferentes variedades con respecto a su calidad.
Preliminarmente, Chater, quien es parte de la beca de la Iniciativa Global Alimentaria de la Universidad de California del 2016, ha identificado siete variedades de granadas que tienen un potencial de comercializar su jugo. Tres de ellas - Blaze, Phoenicia y Purple Heart – fueron producidas por su abuelo, quien era mecánico en un hospital pero desarrolló el culto observado entre cultivadores de frutas en California por crear nuevas variedades de granadas.
He aquí algunas de las ventajas y desventajas de cada variedad comparadas con la wonderful:
Al Sirin Nar: fruta grande con semillas duras, cáscara suave y arilos grandes. Con su jugo agridulce, puede ser útil para aplicarse en zumos. Puede ser que las semillas sean muy duras como para venderse como fruta entera.
Desertnyi: fruta de semilla blanda, tamaño mediano con calidad ornamental. Contiene un sabor delicioso y balanceado que ha sido descrito como parecido a los cítricos. Pareciera que los árboles necesitan de una espaldera o porta injertos para su producción comercial. Tiene potencial de ser vendida como fruta entera.
Parfianka: variedad de semillas blandas con un sabor de agridulce a dulce. De crecimiento muy precoz en el campo, tanto en la costa como en el desierto. Esta variedad es favorecida internacionalmente por su sabor refrescante y semillas blandas. Tiene potencial de ser vendida como fruta entera.
Phoenicia: fruta grande con semillas medianamente a muy duras. Las frutas son multicolores con semillas amarillas, rosas y rojas. Sabor agridulce con una acidez que los consumidores disfrutan. Al parecer la fruta se mantiene en buen estado en almacenamiento.
Purple Heart: fruta roja de tamaño mediano con un jugo y arilos de color rojo oscuro. La fruta y el jugo son similares a la variedad wonderful. Se vende como sharp velvet en el viñedo Dave Wilson.
Sakerdze: fruta grande, con semillas duras, cáscara suave y arilos grandes. El jugo es agridulce. El color de la fruta puede ser entre rosada y roja.

John Chater recuerda ese día vívidamente. Tenía como dos años de edad cuando su abuelo le dio una granada color púrpura oscuro. Sintiéndose feliz, la partió y empezó a comerla.
Pronto se dio cuenta de su error. Llevaba puestos sus zapatos nuevos de gamuza café claro. El jugo de la granada pronto llegó hasta sus zapatos dejando una marca permanente.
“Esa fue mi primera experiencia, que recuerde, con las granadas y fue algo que me metió en problemas”, mencionó Chater. “Estaba tan deliciosa que no me di cuenta que me iba a manchar”.
Más de treinta años después Chater es un estudiante de doctorado en la Universidad de California en Riverside, enfocado en la investigación de granadas. El continúa edificando en base al trabajo realizado por su abuelo S. John Chater, quien era un empleado de mantenimiento en un hospital, pero desarrolló una afición muy grande, entre los productores de frutas raras en California, por la creación de nuevas variedades de granadas.
El joven Chater, trabaja con variedades de granadas seleccionadas del National Clonal Germplasm Repository in Winters, incluyendo varias de ellas producidas por su abuelo (quien murió en el 2002), con el fin de que haya un mejor entendimiento acerca del potencial comercial de estas variedades.
En el presente, un 90 a 95 por ciento de las granadas pertenecen a una sola variedad: la Wonderful, dijo Chater. (Además, en California se cultivan más del 95 por ciento de la granadas de Estados Unidos, agregó).
Trabajando bajo la dirección de Don Merhaut, especialista en cultivos ornamentales y floricultura de Extensión Cooperativa de UC Riverside, Chater ha establecido pruebas experimentales de variedades de granadas en Riverside y Camarillo.
Ha plantado 12 variedades de granadas, 15 árboles por variedad, para evaluar su capacidad para establecerse, su precocidad (floración y producción de frutos), utilidad para los cultivadores y atractivo para los consumidores.
De las 12 variedades, 10 son comestibles (Parfianka, Desertnyi, Wonderful, Ambrosia, Eversweet, Haku Botan, Green Globe, Golden Globe, Phoenicia y Lofani) y dos son de tipo ornamental (Ki Zakuro y Nochi Shibori). Las variedades ornamentales, cuyas flores se parecen a los claveles, pueden ser de interés para la industria de la floricultura, indicó Chater.
Los investigadores desean que los consumidores puedan ir al mercado, y así como sucede con las manzanas y cítricos, tenga la opción de comprar diferentes variedades de granadas que varíen en dulzura, dureza de la semilla y color. (Las variedades que Chater estudia oscilan en color desde el verde al amarillo y del rosado al anaranjado a casi púrpura).
Chater estableció sus pruebas en Riverside y Camarillo para poder evaluar las diferencias entre el clima más frío de la costa y el más cálido del interior.
Hasta ahora se cree que las variedades más ácidas se dan mejor en el clima del interior debido a que las altas temperaturas del verano reducen la acidez antes de que la fruta se coseche en el otoño.
Por ejemplo, una variedad como la Wonderful, la cual es alta en acidez, se cultiva comercialmente en el Valle Central. Pero, la Eversweet, la cual tiene un bajo nivel de ácido, no se da bien en la costa.
En lo que respecta al color, algunos investigadores creen que las granadas obtienen su color debido a las temperaturas frías de la noche. Por lo que, los árboles que se plantan en la costa tienden a obtener color más rápido.
Dicho esto, se cree que nadie ha llevado a cabo un estudio completo en Estados Unidos, como el que realiza Chater, diseñado en base a un experimento. Este experimento le permitirá estudiar la interacción de variables incluyendo tamaño, color, dulzura, acidez, actividades antioxidantes y dureza de la semilla bajo diferentes condiciones climáticas.

¿Y la miel? El Estado Dorado ocupa el segundo lugar en producción de miel, eclipsado solo por North Dakota.
¿Así que, por qué no combinarlos todos en un postre? Agregándoles, además, nueces de castilla y queso de cabra para la buena medida y un buen sabor?
Es eso exactamente lo que Julie Loke del programa Food Co-Op de Davis hizo para el evento debutante del recién establecido Centro para la Miel y Polinización (Honey and Pollination Center) del Instituto Robert Mondavi para las Ciencias Vinícolas y Alimentarias de UC Davis (Robert Mondavi Institute for Wine and Food Science) conocido por sus siglas en inglés como RMI.
El evento, que se llevó a cabo el pasado 27 de octubre en el Teatro Sensorial de los Viñedos Silverado de RMI, contó con charlas en torno a la miel y la polinización y la exhibición de una colmena de abejas proveniente de las Instalaciones Científicas sobre las Abejas de Miel Harry H. Laidlaw Jr.
El Centro para la Miel y Polinización, aprobado a principios de año por la Facultad de Ciencias Agrícolas y del Medio Ambiente de UC Davis, tiene como objetivo “convertir a UC Davis en la máxima autoridad en el tema de la miel, abejas de miel y polinización mediante la combinación de recursos y experiencia del RMI y las Instalaciones Científicas sobre las Abejas de Miel del Departamento de Entomología Harry H. Laidlaw Jr.”, señaló la directora ejecutiva de RMI, Clare Hasler-Lewis.
Entre los objetivos del centro se encuentran:
- Expandir la investigación y educación respecto a la nutrición, salud, calidad y apreciación de la miel de abeja.
- Crear información útil para el sector agrícola de California que depende de la polinización por insectos.
- Ayudar a la industria apícola a establecer directrices de etiquetado para garantizar un varietal de miel pura y sin adulterar.
- Coordinar un equipo multidisciplinario de expertos en la producción de miel de abeja, polinización y la salud de las abejas.
- Promover el uso de la miel producida localmente, en el hogar, la industria alimenticia y restaurantes.
Loke, la coordinadora de Instrucción Culinaria de Co-Op de Davis, dice que ha estado obsesionada con la comida desde que tiene uso de la razón. Con 10 años de experiencia siguiendo “aventuras alimenticias” (su repertorio incluye haber dirigido la cocina de un crucero ecológico, trabajado en un jardín orgánico y enseñado a niños a cocinar desde cero). En el presente da clases en el Co-Op de Davis, donde trabaja a tiempo completo a cargo de la mercadotecnia, educación y eventos.
Las granadas son uno de sus nuevos alimentos favoritos.
“Yo soy de la Costa Este y la región central del país y por ello he tenido muy poca exposición a ellas”, indicó”. Me encanta el acto de romper la cáscara y dejar los arilos (granos jugosos) salir, como un hermoso regalo! Me encanta comerlos directamente, pero también los he mezclado con todo, desde granos y almendras tostadas a ensaladas y especialmente postres para darles un toque acidito y divertido".
Así que, cuando Loke dio su presentación sobre cómo preparar el postre Napoleón inspirado en el Baklava con higos frescos, granada, miel y mousse chevre – y lo sirvió a los asistentes – estos clamaban por más.
Este postre rinde para seis a ocho personas, pero “dependiendo de cómo corta el baklava y cuánto mousse usa, puede rendir para más personas”, señaló Loke. Ella lo describe como "capas crujientes de hojaldre griego, nueces de castilla, grumos de mousse acidito preparado con queso de cabra bien distribuidos junto con higos frescos locales y al final todo rociado con miel de abeja de California con un toque de naranja".
Napoleones inspirados en baklava con higos frescos, granada, miel y mousse chevre
Ingredientes:
1/2 barra de mantequilla
10 hojas de hojaldre griego de trigo integral, descongeladas
10 higos frescos, cortados en finas rebanadas revolcadas en un miel de abeja un poco diluida.
Dos tazas de mousse chevre (vea la receta más abajo)
1/4 de taza de miel de abeja, como la de la marca Moonshine Trading Company’s California orange blossom
1 taza de nueces de castilla crudas pistachos finamente picados
1/2 taza de azúcar morena
1 cucharadita de canela
1/4 cucharadita de nuez moscada
1/4 cucharadita de pimienta inglesa (allspice)
Modo de preparar:
Descongele las hojas de hojaldre en el refrigerador durante la noche. Pre caliente el horno a 400 grados. Puede derretir la mantequilla en el horno precalentado o en pedazos en el horno de microondas o en un sartén en la estufa —vigílela muy de cerca. Colóquela en un lugar tibio de la estufa.
En un procesador de alimentos, pique finamente las nueces con el azúcar y las especies. Debe ser picada de tal manera que sea fácil espolvorearla sobre la masa de hojaldre. O pique a mano y revuelva. Póngalo a un lado. Se usará sobre cada una de las capas de hojaldre. Prepare dos charolas suficientemente grandes para acomodar bien las hojas de hojaldre; también puede recortar las hojas de hojaldre para hacerlas caber. Suavemente desenvuelva el hojaldre y cúbralo con una toalla para trastos húmeda y sin pelusa. Separe una hoja de hojaldre completa y con cuidado colóquela sobre la charola para hornear. Vuelva a tapar la pila de hojaldre con la toalla húmeda. Usando una brocha para hojaldre, unte ligeramente de mantequilla la primera capa y espolvoree ligeramente con el relleno de nueces. Repita y continúe hasta que haya hecho cuatro hojas. Después, corte cuidadosamente en recuadros de 4x4 pulgadas, o cualquier otro tamaño y figura que pueda imaginarse. Luego repita el proceso completo con la otra charola. Meta al horno a 400 grados durante alrededor de 10 minutos o hasta que la pasta se haya dorado o se desquebraje. Déjela enfriar y luego forme pequeñas torres con los higos, miel de abeja y el mousse chevre. Rocié con la miel de abeja.
Mousse chevre
½ taza de crema para batir
1/4 taza de queso de cabra (chevre), a temperatura ambiente
1 cucharadita de extracto de vainilla pura y/o ralladura de naranja
2 cucharadas de azúcar
En un tazón para mezclar, bata el queso de cabra con el utensilio de batir hasta que empiece a ablandarse. Agregue la crema y la ralladura de naranja y continúe batiendo hasta que el punto de nieve se empiece a formar. Asegúrese de no sobrecalentar.

Se menciona en la antigua literatura, que el nombre de granada en inglés (pomegranate) se deriva de las palabras francesas “pomme garnete” o manzana con semillas. Las granadas crecen en árboles pequeños o arbustos y fueron introducidas a la agricultura de California hace cerca de 250 años. Los acres sembrados con granadas en California se ha duplicado en los últimos cinco años, aunque la mayoría de las granadas cosechadas se usan para producir concentrados de jugos y son utilizadas principalmente por sus propiedades antioxidantes y otros beneficios a la salud.
Me sorprendió encontrar numerosas recetas que utilizan las semillas agridulces de las granadas, junto con consejos prácticos sobre la mejor manera de retirarlos de la cáscara y membrana de la granada. A continuación le ofrezco una receta que nos permite comer una parte de las semillas como botana y usar el resto en una nueva y deliciosa forma de saborear el salmón.
Salmón con couscous de granada y lentejas (sacado del sitio Web del Consejo de Granadas)
Couscous:
1 taza de lentejas verdes pequeñas Puy
2 tazas de agua fría
2 cucharadas de aceite de olivo
1 cebolla grande, picada en pedacitos
1 manzana, sin cáscara y semillas y picada en cuadritos
1 2/3 taza (10 onzas.) de couscous de rápido cocimiento
2 tazas de agua hirviendo
1 granada grande, desgranada
1 cucharada de tomillo limonero cortado en pedazos no muy pequeños
Sal Kosher y pimienta negra recién molida
Salmon:
6 porciones de 6 onzas de filetes de salmón
Aceite de olivo para freír
Sal Kosher y pimienta negra recién molida
Ramitas de tomillo fresco y para adornar, granos de la granada
Preparación del couscous de lentejas:
Revise las lentejas y retire cualquier basura que contengan, luego enjuáguelas con agua fría. En un sartén grande, combine agua y lentejas y déjelas hervir a fuego alto. Reduzca el fuego a medio y siga hirviendo hasta que se ablanden, alrededor de 20 a 30 minutos. Quíteles el agua y póngalas en un lado. En un sartén para freír, caliente el aceite de oliva a fuego medio. Agregue las cebollas, moviendo ocasionalmente, hasta que se doren. Agregue la manzana y cueza hasta que empiece a ablandarse. Incorpore las semillas de la granada y el couscous a la mezcla de cebolla y manzanas y cuidadosamente agregue el agua hirviendo. Retire del fuego y ponga a un lado mientras prepara el salmón. Agréguele hierbas, sal y pimienta al gusto.
Preparación del salmón:
Caliente un sartén que no pegue a fuego medio. Unte los filetes de salmón con aceite de oliva y sazone generosamente con sal y pimienta. Coloque la parte de la piel del salmón hacia abajo en el sartén caliente. Cueza sin tocar hasta que la piel se haya dorado, entre 4 a 5 minutos. Dele vuelta a los filetes y continúe cocinando hasta que se hayan cocido, entre 2 a 3 minutos. Retire del fuego y sirva sobre el couscous. En una charola para servir, distribuya el couscous de lentejas y coloque el salmón encima. Adorne con semillas de granadas y tomillo.
