¿Cuántas veces ha escuchado decir eso?
No se echó a perder, pero se granuló, algo que pasa con la miel de abeja. La granulación es la formación de cristales de azúcar (glucosa). Re caliente la miel y vuelve a estar lista para comerse.
“La mayoría de las mieles de abeja se granulan cuando se guardan en contenedores por mucho tiempo”, dice el especialista en miel de abeja/guardián de abejas/apicultor durante seis décadas, Norman Gary, quien también es profesor emérito del Departamento de Entomología en UC Davis y autor del libro mejor vendido para principiantes en apicultura, Honey Bee Hobbyist: The Care and Keeping of Bees.(Aficionados a las abejas de miel: el cuidado y manejo de las abejas).
“Algunas veces la miel se granula todavía estando en el panal”, señala Gary. ”La razón básica por la que la miel se granula es porque las abejas han disuelto más azúcar en la solución — un proceso llamado saturación — de la que pueden cargar durante el almacenamiento. La tendencia a granular es determinada principalmente por la concentración de glucosa. El exceso de glucosa forma cristales de hidrato de glucosa que son agregados a la miel".
Eric Mussen, especialista del Departamento de Entomología de Extensión Cooperativa de la UC, asegura que casi todas las variedades de miel de abeja se granulan con el paso del tiempo, “pues se trata de una solución azucarada súper saturada. Aún cuando se vea bromosa, cristalizada o solidificada, la miel no se echa a perder. Afloje la tapadera y meta el envase en agua caliente – la miel regresará a su estado líquido si la revuelve. Cuando los cristales de azúcar liberan el agua en la miel, esta puede fermentarse. En este punto, ya no puede ser rescatada”. Calentar un poco en el microondas puede también ser una buena forma de licuar la miel, mantiene Gary, quien recomienda calentar la miel en el frasco en intervalos de 30 segundos, parar y revolver.
“Monitoree la temperatura para que de no se caliente más de lo necesario para obtener la licuefacción de la miel. Las temperaturas altas pueden causar ‘cambios químicos’ que algunos puristas consideran como daño térmico”. También puede cambiar el delicado sabor de la miel y oscurecerla.
Algunas mieles no se cristalizan o no lo hacen rápidamente. La miel tupelo, obtenida del néctar del árbol de tupelo, no se granula, explica Gary.
En lo que se refiere al sabor, Mussen resalta que la miel de abeja sabe más dulce que la sacarosa “ya que contiene, fructosa libre, la cual nos resulta más dulce que la sacarosa. La miel también contiene glucosa libre, pero esa no nos sabe excepcionalmente dulce”.
“Los colores y sabores de la miel son propiedades del néctar recogido por las abejas, no de la abejas que producen la miel”, indica Mussen. “El clima tiene un impacto sobre el néctar. La miel que se produce a partir de la flor de alfalfa puede ser transparente o 'blanca como el agua', dorada, como la miel 'trébol’ o significativamente más oscura, acercándose al ámbar, cuando se le produce en el norte de Canadá, o en las zonas centro oeste y sur de EUA, respectivamente. El aguamiel (mead) es otro término que desconcierta a la gente. Se trata de una bebida alcohólica hecha con miel de abeja.
“La miel de abeja es la fuente básica de azúcar para la fermentación del aguamiel", explica Mussen. "El aguamiel puede ser seco o dulce, dependiendo del gusto de quien lo produce. Con la adición de especies o jugos de frutas, al aguamiel se le conoce por varios nombres en inglés: metheglin, hippocras, cyser o pymet”.
Y si cocina con miel de abeja, conozca sus propiedades.
“Para hornear y en bebidas, la miel de abeja puede ser un substituto directo del azúcar”, dice Mussen. “Las mieles de color más claro usualmente tienen un sabor más suave, mientras que las mieles más oscuras son más robustas. Ese no es siempre el caso. La miel de abeja tiene un contenido de agua de 17 por ciento, así que para hornear, es bueno a veces reducir el volumen de otros líquidos en la receta. Otra cosa, la miel tiende a oscurecerse cuando se le usa para hornear, así que reduzca la temperatura unos 25 grados, si desea que se dore menos. El producto terminado puede durar “fresco” durante más tiempo que los que se hacen con azúcar debido a la presencia de la fructosa libre que atrae humedad de agua. Si cubre la taza de medición con una ligera capa de aceite de cocinar, permitirá que la miel se deslice fácilmente, en lugar de quedarse pegada a la taza".
Si está ansiosa por probar diferentes variedades de miel de abeja, diríjase al Briggs Hall durante el Día de Campo de UC Davis que se llevará a cabo el 20 de abril. Mussen ofrecerá su tradicional degustación de miel de abeja, gratuitamente. El año pasado, el experto ofreció seis variedades de miel de abeja: la flor de alforfón de California, aguacate, eucalipto, salvia, naranja y cactus. En el pasado, los visitantes también han probado la miel de algodón, mora, abrepuño y otras.
Abrepuño (Centaurea solstitialis), nativa de Eurasia es una maleza invasiva exótica abominada por casi todos, excepto por los apicultores y quienes gustan de la miel de abrepuño.
“La miel de abrepuño es la champaña de las mieles de abeja”, dijo el apicultor del condado de Yolo, Dennis Price de Good Bee Apiary. “Es la mejor que existe. Sin embargo, puede ser que la miel de abrepuño de este año no sea tan buena debido a la escasez de lluvia".

Mantequilla de miel de abeja de naranja para el pan de maíz
1/2 taza de mantequilla sin sal, a temperatura ambiente
1/8 de cucharadita de sal, o al gusto
1 cucharada de ralladura de naranja, rallada finamente (1 naranja mediana o grande)
1 cucharada de miel de abeja
Pan de maíz preparado
Ponga la mantequilla suavizada en un tazón con la sal y bata con un batidor de mano hasta que se ponga cremosa. Añada la ralladura de naranja y luego la miel y siga batiendo a mano. Caliente el pan de maíz a 250 grados durante 5 a 10 minutos. Retire del horno y unte un poco de la mantequilla con miel y naranja con una brocha de cocina. Enfríe durante 15 minutos antes de cortar en rebanadas. Sirva junto con el resto de la mantequilla.
Pasta cremosa de naranja para untar
1 paquete (8 onzas) de queso crema
1/4 taza de miel de abeja, de sabor suave
2 cucharadas de jugo de naranja
1/2 cucharadita de ralladura de naranja
Combine el queso crema ablandado, la miel, el jugo y la ralladura de naranja. Mezcle bien en la licuadora. Refrigere durante una hora mínimo — si lo hace toda la noche es mejor. Unte la pasta en bollos de pan, pastelitos estilo muffin y croissants.

¿Y la miel? El Estado Dorado ocupa el segundo lugar en producción de miel, eclipsado solo por North Dakota.
¿Así que, por qué no combinarlos todos en un postre? Agregándoles, además, nueces de castilla y queso de cabra para la buena medida y un buen sabor?
Es eso exactamente lo que Julie Loke del programa Food Co-Op de Davis hizo para el evento debutante del recién establecido Centro para la Miel y Polinización (Honey and Pollination Center) del Instituto Robert Mondavi para las Ciencias Vinícolas y Alimentarias de UC Davis (Robert Mondavi Institute for Wine and Food Science) conocido por sus siglas en inglés como RMI.
El evento, que se llevó a cabo el pasado 27 de octubre en el Teatro Sensorial de los Viñedos Silverado de RMI, contó con charlas en torno a la miel y la polinización y la exhibición de una colmena de abejas proveniente de las Instalaciones Científicas sobre las Abejas de Miel Harry H. Laidlaw Jr.
El Centro para la Miel y Polinización, aprobado a principios de año por la Facultad de Ciencias Agrícolas y del Medio Ambiente de UC Davis, tiene como objetivo “convertir a UC Davis en la máxima autoridad en el tema de la miel, abejas de miel y polinización mediante la combinación de recursos y experiencia del RMI y las Instalaciones Científicas sobre las Abejas de Miel del Departamento de Entomología Harry H. Laidlaw Jr.”, señaló la directora ejecutiva de RMI, Clare Hasler-Lewis.
Entre los objetivos del centro se encuentran:
- Expandir la investigación y educación respecto a la nutrición, salud, calidad y apreciación de la miel de abeja.
- Crear información útil para el sector agrícola de California que depende de la polinización por insectos.
- Ayudar a la industria apícola a establecer directrices de etiquetado para garantizar un varietal de miel pura y sin adulterar.
- Coordinar un equipo multidisciplinario de expertos en la producción de miel de abeja, polinización y la salud de las abejas.
- Promover el uso de la miel producida localmente, en el hogar, la industria alimenticia y restaurantes.
Loke, la coordinadora de Instrucción Culinaria de Co-Op de Davis, dice que ha estado obsesionada con la comida desde que tiene uso de la razón. Con 10 años de experiencia siguiendo “aventuras alimenticias” (su repertorio incluye haber dirigido la cocina de un crucero ecológico, trabajado en un jardín orgánico y enseñado a niños a cocinar desde cero). En el presente da clases en el Co-Op de Davis, donde trabaja a tiempo completo a cargo de la mercadotecnia, educación y eventos.
Las granadas son uno de sus nuevos alimentos favoritos.
“Yo soy de la Costa Este y la región central del país y por ello he tenido muy poca exposición a ellas”, indicó”. Me encanta el acto de romper la cáscara y dejar los arilos (granos jugosos) salir, como un hermoso regalo! Me encanta comerlos directamente, pero también los he mezclado con todo, desde granos y almendras tostadas a ensaladas y especialmente postres para darles un toque acidito y divertido".
Así que, cuando Loke dio su presentación sobre cómo preparar el postre Napoleón inspirado en el Baklava con higos frescos, granada, miel y mousse chevre – y lo sirvió a los asistentes – estos clamaban por más.
Este postre rinde para seis a ocho personas, pero “dependiendo de cómo corta el baklava y cuánto mousse usa, puede rendir para más personas”, señaló Loke. Ella lo describe como "capas crujientes de hojaldre griego, nueces de castilla, grumos de mousse acidito preparado con queso de cabra bien distribuidos junto con higos frescos locales y al final todo rociado con miel de abeja de California con un toque de naranja".
Napoleones inspirados en baklava con higos frescos, granada, miel y mousse chevre
Ingredientes:
1/2 barra de mantequilla
10 hojas de hojaldre griego de trigo integral, descongeladas
10 higos frescos, cortados en finas rebanadas revolcadas en un miel de abeja un poco diluida.
Dos tazas de mousse chevre (vea la receta más abajo)
1/4 de taza de miel de abeja, como la de la marca Moonshine Trading Company’s California orange blossom
1 taza de nueces de castilla crudas pistachos finamente picados
1/2 taza de azúcar morena
1 cucharadita de canela
1/4 cucharadita de nuez moscada
1/4 cucharadita de pimienta inglesa (allspice)
Modo de preparar:
Descongele las hojas de hojaldre en el refrigerador durante la noche. Pre caliente el horno a 400 grados. Puede derretir la mantequilla en el horno precalentado o en pedazos en el horno de microondas o en un sartén en la estufa —vigílela muy de cerca. Colóquela en un lugar tibio de la estufa.
En un procesador de alimentos, pique finamente las nueces con el azúcar y las especies. Debe ser picada de tal manera que sea fácil espolvorearla sobre la masa de hojaldre. O pique a mano y revuelva. Póngalo a un lado. Se usará sobre cada una de las capas de hojaldre. Prepare dos charolas suficientemente grandes para acomodar bien las hojas de hojaldre; también puede recortar las hojas de hojaldre para hacerlas caber. Suavemente desenvuelva el hojaldre y cúbralo con una toalla para trastos húmeda y sin pelusa. Separe una hoja de hojaldre completa y con cuidado colóquela sobre la charola para hornear. Vuelva a tapar la pila de hojaldre con la toalla húmeda. Usando una brocha para hojaldre, unte ligeramente de mantequilla la primera capa y espolvoree ligeramente con el relleno de nueces. Repita y continúe hasta que haya hecho cuatro hojas. Después, corte cuidadosamente en recuadros de 4x4 pulgadas, o cualquier otro tamaño y figura que pueda imaginarse. Luego repita el proceso completo con la otra charola. Meta al horno a 400 grados durante alrededor de 10 minutos o hasta que la pasta se haya dorado o se desquebraje. Déjela enfriar y luego forme pequeñas torres con los higos, miel de abeja y el mousse chevre. Rocié con la miel de abeja.
Mousse chevre
½ taza de crema para batir
1/4 taza de queso de cabra (chevre), a temperatura ambiente
1 cucharadita de extracto de vainilla pura y/o ralladura de naranja
2 cucharadas de azúcar
En un tazón para mezclar, bata el queso de cabra con el utensilio de batir hasta que empiece a ablandarse. Agregue la crema y la ralladura de naranja y continúe batiendo hasta que el punto de nieve se empiece a formar. Asegúrese de no sobrecalentar.

Fueron las abejas.
Bueno gracias a ellas se pudo hacer.
Échele un vistazo a una de las recetas favoritas de May Berenbaum y así sabrá porqué le ha llamado “Apiscotti” o “Bee-Enable Biscotti”, (biscotti hecho gracias a las abejas melíferas).
Y es que siete de los 12 ingredientes (mantequilla, miel, extracto de almendra, nuez moscada, arándanos, cerezas y almendras) dependen del trabajo de polinización de la abeja melífera, Apis mellifera.
May Berenbaum, profesora y directora del Departamento de Entomología de la Universidad de Illinois, amablemente compartió la receta al final de la nota.
Es probable que usted conozca a Berenbaum, en su papel de entomóloga, administradora, investigadora de la abeja melífera, autora de libros, columnista (American Entomologist), escritora de opinión en las páginas editoriales (ver su artículo sobre bed bugs, Chinches de Cama, en el periódico New York Times) esposa y madre de familia.
Pero no es apicultora.
“A pesar de que soy entomóloga, no soy apicultora, en ningún sentido de la palabra”, escribió en su reciente libro publicado, Honey, I'm Homemade: Sweet Treats from the Beehive Across the Centuries and Around the World, Este es un proyecto que beneficia al University of Illinois Pollinatarium, el primer centro independiente de promoción y difusión dedicado a la ciencia de las plantas con flores y sus polinizadores.
“En diferentes periodos de mi vida he sido terrateniente de abejas; otros entomólogos han criado abejas en mis propiedades, pero yo personalmente nunca he tenido una colmena que pudiera decir que es mía, tampoco he estado involucrada en la producción de la miel. Para ser sincera, les temo un poquito a las abejas y no sólo porque pueden picar. Las picaduras son un riesgo manejable. Pero lo que encuentro desconcertante acerca de las abejas es que son inquietantemente talentosas y completamente diferentes al más de un millón de otras especies de insectos.”
Berenbaum, miembro de la Academia Americana de Artes y miembro de la Academia Nacional de Ciencias dice que la miel es un alimento especial “por su poder de evocar un momento y espacio en particular. Cada vez que se recoge de la colmena, la miel adquiere el matizado sabor de un particular conjunto de flores, ya sea tréboles, flor de azahar, alforfón y otros, que es procesado y almacenado por un grupo de abejas. La miel no sólo es una fotografía del momento y el lugar; es el sabor del momento y el lugar, y lo que da sabor a los deliciosos productos horneados y otros manjares que se encuentran aquí.”
Estamos muy complacidos de ver que hay un proyecto que está beneficiando al Pollinatarium y también poder dar reconocimiento a las humildes abejas melíferas que contribuyen aproximadamente $20 mil millones anualmente a la agricultura de los Estados Unidos con tan sólo su labor de polinización. Y el ingreso total por la producción de miel en el 2008 fue de más de $226 millones, enfatiza Berenbaum.
Sin la abeja, no habría Apiscotti y otros alimentos que nos encantan y eso sería desastroso.
He aquí la receta para Apiscotti.
Apiscotti
½ taza de mantequilla
½ taza de azúcar
¼ taza de miel
3 huevos
½ cucharadita de sal
1 cucharadita de extracto de almendra
¼ de cucharadita de nuez moscada
2 cucharaditas de polvo para hornear
2 ½ a 3 tazas de harina
½ taza de arándanos secos, picados
½ taza de almendras secas, picadas
½ taza de almendras blanqueadas y rebanadas, picadas
Precaliente el horno a 350 grados. Mezcle el azúcar y la mantequilla; agregue la miel y mezcle hasta que esté cremosa. Bata los huevos a punto de nieve y añada la sal, extracto de almendra, nuez moscada y el polvo de hornear. Combine la mezcla de azúcar y mantequilla con la mezcla de los huevos. Añada la harina hasta que la masa tenga una consistencia que permita manipularla. Refrigere la masa por una hora o más.
Divida la masa fría en tres partes y aplane cada una para formar un rectángulo (añada harina adicional para hacerla más manejable si es necesario). Marque una línea en el centro de cada una de las secciones de la masa y rellene con las cerezas picadas, los arándanos y las nueces. Doble los lados de cada rectángulo para formar una barra, con el relleno en el centro y selle la barra.
Ponga los panes en una charola engrasada para galletas y métalos al horno a 350 grados F por 45 minutos a 1 hora o hasta que se vean dorados. Corte diagonalmente en rebanadas de ½ pulgada mientras está caliente. Para obtener unas rebanadas crujientes, métalas nuevamente al horno por 5 ó 10 minutos más o hasta que estén bien doradas.
