As a child of the Great Depression, I am familiar with the pulse crops and the delicious menus including them. They were usually inexpensive for the times. Unfortunately, dried beans and others require preparation and long cooking times for the benefits. Too bad that modern cooks do not look with favor on the pulse crops..

If there’s not enough time to prepare a meal from the dried beans, canned beans are a great option and still affordable. Our research trials on dry beans include evaluating for high canning quality. Rinse the beans with cold water to reduce the salt content. Thanks for the comment.

We had a wonderful crop of black beans a few years ago. Problem was figuring out how to shell them without it being a day long process. Is there a DIY solution for some type of shell shucker? Many thanks and keep the info coming!
