De manera colectiva, los distritos unidos de preparatoria de Santa María-Bonita y Santa María, sirven a 25,600 estudiantes que califican para comidas gratuitas o a precio reducido. Si bien las escuelas ofrecen comidas nutritivas a los estudiantes, en particular, los adolescentes compran comidas rápidas durante horas que no son de comida como después de clases. Las comidas rápidas son fuertemente dirigidas a la juventud que vive en barrios de bajos ingresos y son típicamente comidas altas en calorías que contienen azúcares agregadas, grasas saturadas y sodio. Más aun, 52.1 por ciento de los jóvenes en el condado de Santa Bárbara reportaron consumir comida rápida dos o más veces por semana. Los estudios indican que los niños y adolescentes que aprenden a cocinar a edad temprana son más inclinados a adoptar prácticas alimenticias saludables que continuarán durante la edad adulta. Comer una dieta saludable y ejercitarse regularmente puede reducir el riesgo de enfermedades relacionadas a una mala alimentación y control de peso como hipertensión, enfermedades del corazón e infartos.
Al final de cada sesión, se les pidió a los jóvenes completar el Teacher Tasting Tool (Herramienta de desgustación para el Maestro), que mide la disponibilidad de los participantes para consumir una comida particular de nuevo. Después de probar una pizza en una tortilla de harina de trigo integral, ocho (80%) de cada 10 encuestados reportaron estar dispuestos a comerla de nuevo. Asimismo, después de una sesión por separado donde los participantes probaron una ensalada de fruta elaborada con jícama, 15 (83 por ciento) de los 18 encuestados, reportaron que estaban dispuestos a comerla de nuevo y a pedirla en casa.
Al final de la serie de clases, los jóvenes completaron la encuesta cualitativa abierta “What Did You Learn” (“Que Aprendiste”), que pregunta sobre cambios en conocimiento y conductas. Diez jóvenes respondieron la encuesta y respecto a la pregunta referente al aprendizaje, el tema de mejoramiento en el manejo y seguridad en el manejo de cuchillos fue reportada con más frecuencia, seguida por reportes relacionados al incremento de conocimiento sobre nutrición y aumento del conocimiento sobre la preparación de comida saludable. Cuando se les preguntó sobre una cosa que harían diferente debido a estas clases, los estudiantes respondieron con el tema de comodidad al usar un cuchillo y preparar comida nutritiva. Cuando los jóvenes se sienten seguros con sus habilidades culinarias y de nutrición, es mas probable que tomen decisiones alimenticias mas saludables. En general, los participantes obtuvieron valiosas habilidades de vida en el arte culinario, manejo seguro de alimentos y nutrición que motivan a hacer elecciones saludables para reducir el riesgo de enfermedades relacionadas con su dieta alimenticia que apoyan los esfuerzos de ANR's para promover personas y comunidades saludables.

Los doctores suelen decir que podemos vivir más tiempo si hacemos ejercicio y comemos saludablemente. Muy bien, pero, ¿qué significa eso en realidad? Se escucha mucho hablar sobre las súper comidas y súper dietas, por lo que saber realmente cuál es la manera “de comer bien” puede ser súper confuso.
“No se trata de pasar hambre o hacer más ejercicio del que pueda resistir en el gimnasio”, señala Applegate. “Se trata de tomar decisiones que beneficien su cuerpo, en lugar de castigarse cortando calorías o con ejercicios difíciles de realizar”.
Applegate enseña nutrición en UC Davis, incluyendo un curso muy popular de nutrición en línea y en persona que atrae a varios miles de estudiantes cada año. Ella es triatleta, columnista de nutrición deportiva para Runner's World, autora de varios libros de nutrición deportiva, directora de nutrición deportiva para Atletismo Intercolegial de UC Davis y asesora de atletas olímpicos. En pocas palabras, conoce lo que hace. Y cuando se trata de comer de manera saludable, ella insiste que no lo piense mucho.

La lista de compras de Applegate incluye una amplia variedad de alimentos sabrosos: una abundancia de verduras frescas, carnes y aves, pescado, huevos, granos, productos lácteos, chocolate y mucho más. ¿Qué más se puede pedir?
Aún cuando no siga el plan al pie de la letra, las reglas generales de Applegate son manejables y directas:
- Desayune. Una comida sólida por la mañana sienta la pauta para un buen día de alimentación saludable.
- Coma algo de proteína en cada comida para manejar su peso y apoyar su ejercicio.
- Los granos integrales, como el arroz integral, quínoa y trigo integral son sus amigos (a no ser que no pueda tolerar el gluten. Si es así, coma arroz integral y otros productos que no provengan del trigo).
- Intente comer por lo menos 2½ tazas de verduras y de 2 a 3 frutas al día.
- Incluya las grasas saludables del pescado, nueces y semillas. Use aceite de oliva o de aguacate.
- Coma de dos a tres porciones de alimentos ricos en calcio como lácteos o leche de soya. Diariamente, procure comer un producto probiótico como yogur o kéfir para mejorar las funciones digestivas y el sistema inmunológico.
- Varíe los ejercicios. Usted desarrolla músculos más fuertes cuando intenta diferentes tipos de ejercicios.
- Planee hacer de 30 a 60 minutos de actividad física de moderada a vigorosa, de cinco a siete días de la semana. Cualquier cosa que acelere el ritmo cardiaco: caminar aprisa, trotar, montar bicicleta, nadar, bailar, jugar baloncesto, lo que usted quiera. Si no puede encontrar tiempo para ejercitar durante 30 minutos seguidos, 10 minutos aquí y 10 por allá, funcionan bien.
- Incluya de tres a cinco sesiones para fortalecer y tonificar los diferentes grupos de músculos a la vez que desarrolla una fortaleza corporal.
Ajustarse a comer de manera saludable y a una rutina de ejercicio toma tiempo, indica Applegate, así que no sea tan duro consigo mismo.

Con el fin de suplementar sus suministros alimenticios, los californianos pueden recurrir al programa CalFresh, el cual era conocido antiguamente como cupones para alimentos. El programa federal se llama, Programa de Asistencia para Nutrición Suplementaria, o SNAP por sus siglas en inglés (Supplemental Nutrition Assistance Program).
Para ayudar a los participantes de CalFresh a hacer rendir su dinero para alimentos y mantener una dieta nutritiva, el Programa Educativo sobre Nutrición CalFresh de la Universidad de California (University of California’s CalFresh Nutrition Education Program) ofrece una serie de cuatro talleres llamados Planee, Compre, Ahorre y Cocine ("Plan, Shop, Save and Cook").
Los consejeros de Extensión Cooperativa de la UC, Dorothy Smith y Marcel Horowitz descubrieron, a través de una encuesta de seguimiento, que una tercera parte de las 1,373 personas que participaron en los talleres señalaron que no se estaban quedando sin alimentos al final del mes con tanta frecuencia.
En el primer taller, los participantes aprenden los beneficios de preparar un plan de comidas balanceadas. En el tercer taller, los instructores de UC CalFresh les mostraron a los participantes cómo determinar las opciones menos costosas de los productos en su lista de compras. Por ejemplo, si comprar un corte de carne de res conocido como aguja (chuck roast) es mas barato y contiene menos grasa que un solomillo. El precio por unidad, compras a granel, marcas genéricas, artículos de uso personal, fuentes alternativas de proteína y cómo prevenir que se echen a perder y se desperdicien alimentos son cosas que deben tomarse en cuenta cuando se eligen alimentos.
Durante el último taller, los participantes prepararon y probaron platillos hechos con alimentos de bajo costo y nutritivos. También pusieron sus conocimientos a trabajar con la creación de un plan de comidas para una semana.
UC CalFresh se ha unido a bancos de alimentos locales en los condados de San Luis Obispo y Santa Bárbara , para instar a las familias a comer más frutas y verduras. Los representantes sobre nutrición de UC Calfresh usaron productos de los bancos de alimentos para preparar platillos saludables con frutas y verduras, los cuales fueron compartidos con las familias participantes.
UC CalFresh está enseñando a los californianos que los platillos nutritivos y sabrosos no tienen que costar mucho.

El pasado sábado 31 de marzo, los angelinos celebraron el Día de Servicio del Alcalde en Favor de los Alimentos Buenos (Mayor's "Good Food Day of Service).
El alcalde de Los Ángeles Antonio Villaraigosa, el Consejo de Política Alimentaria de Los Ángeles (Los Ángeles Food Policy Council) y numerosos colaboradores comunitarios organizaron este evento de toda la ciudad para resaltar la importancia de los alimentos saludables y celebrar el legado del líder campesino César Chávez. Se establecieron 100 sitios participantes en toda la ciudad, todos promoviendo el servicio comunitario enfocado en el acceso a alimentos nutritivos.
Yo participé en el Jardín Comunitario de Glassell Park en el Noreste de Los Ángeles, ofreciendo varios talleres cortos sobre jardines en contenedores. No había visitado este jardín antes y pienso que su historia es interesante. Encajonado entre edificios de departamentos y casas, el jardín fue establecido apenas el pasado mes de julio, pero ya se ve como todo un centro de actividad comunitaria. Antes era una casa que se notaba que era usada como centro de distribución de drogas. La historia de este sitio fue publicada en el diario Los Ángeles Times el pasado mes de abril. La casa fue demolida y el lote donado a la ciudad. El concejal que representa esta zona creyó que un jardín comunitario ayudaría al vecindario a sanarse de la exposición de tantos años a la actividad delictiva y llamó a los socios indicados para que llevasen a cabo este proyecto. En este caso, un jardín comunitario fue visto como parte de la solución a un problema urbano.
La idea de que los jardines de cultivo pueden ayudar a resolver retos urbanos se está haciendo algo común entre los legisladores. Muchos líderes municipales están acudiendo a los jardines comunitarios y otros tipos de agricultura urbana para abordar asuntos que van desde el arrojar basura ilegalmente en lotes baldíos a la falta de acceso a frutas y verduras frescas en los llamados “desiertos alimentarios” urbanos. Ciudades a lo largo de California y Estados Unidos están desarrollando políticas para apoyar la agricultura urbana. San Diego, por ejemplo, aprobó recientemente nuevas políticas en apoyo a la agricultura urbana.
Un resumen sobre políticas de agricultura urbana en otras importantes ciudades de EUA, dado a conocer recientemente, muestra cuán extenso es este movimiento en todo el país. La agricultura urbana puede incluir todo: desde comunidades y jardines escolares a pequeñas granjas comerciales y la cría de abejas y gallinas en la ciudad. Mientras tanto, los miembros del jardín de Glassell Park en Los Ángeles están contentos con su pequeño pedazo de paraíso urbano. Los ganadores de las dos últimas parcelas disponibles fueron elegidos mediante una rifa ese sábado, lo cual fue recibido con gran entusiasmo por todos los participantes.
