Zesty Peach BBQ Sauce

Golden orange with red flecks, this barbecue sauce not only looks amazing, but tastes out of this world. Spoon some over your chicken or fish this summer!

Yield: 8 half-pint jars
Prep: 45 Minutes
Processing: 15 Minutes

INGREDIENTS:
• 6 cups finely chopped, pitted, peeled yellow peaches
(about 3 lbs or 9 medium).
• 1 cup finely chopped seeded red bell pepper (about 1 large)
• 1 cup finely chopped onion (about 1 large)
• 3 Tbsp finely chopped garlic (~ 14 cloves)
• 1 ¼ cups honey
• ¾ cup apple cider vinegar (at least 5% acidity)
• 1 Tbsp Worcestershire sauce
• 2 tsp hot pepper flakes
• 2 tsp dry mustard
• 2 tsp salt

INSTRUCTIONS:

Prep:
• Prepare boiling water canner. Heat jars in simmering water until ready to use, do not boil.
• Wash lids in warm soapy water and set aside with bands.
• Assemble and measure ingredients.

Cook:
• Combine all ingredients in a large saucepan. Bring to a boil. Reduce heat and simmer,
stirring frequently, until the mixture thickens to the consistency of a thin commercial
barbecue sauce, about 25 minutes. If desired, puree in batches in a food processor or use
an immersion blender to help break down the peaches.

Can:
• Ladle hot sauce into hot jars leaving ½-inch headspace. Remove air bubbles and adjust
headspace if needed. Wipe rims of jars with a dampened, clean paper towel; apply two-piece
metal canning lids.
• Place jars in canner. Water must cover jars by 1 inch. Cover canner and bring water to a
boil. Process jars 15 minutes, adjusting for altitude. Turn off heat and remove canner lid. Let
jars sit for 5 minutes. Remove jars from canner; do not retighten bands if loose. Cool 12-24
hours. Check lids for seal, they should not flex when center is pressed. Remove rings and
label jars. Store in a cool, dark place.


OTHER/TIPS:
• Do not use white peaches.
• To peel peaches, drop them in a pot of boiling water for 30 seconds. Immediately rinse
under cold running water. The skins should lift off easily. You can chop the peaches by
hand or if you prefer, in a food processor.
