Potatoes are tubers that grow underground from the stem of the plant. While it’s possible to grow potatoes from seed, most gardeners plant pieces cut from seed potatoes. Ensure that each cut piece includes an ‘eye’. Allow the pieces to dry for 1 to 3 days before planting. Use certified seed potatoes rather than grocery store potatoes to avoid introducing pests or diseases into your garden. 

Cultural tips for growing potatoes, UC IPM

Planting

  • Plant prepared seed potato pieces in February to April, possibly in May depending on weather and local conditions.
  • As the plants grow, mound the soil around them until at least 6 inches of the stem is covered.
  • Maintain soil cover for tubers as they expand. Tubers exposed to light may have bitter-tasting green areas and should not be eaten.
  • Potatoes are sensitive to soil moisture. Maintain a consistent soil moisture as much as possible.

Harvesting

  • Potatoes usually mature in 90 to 120 days after planting, depending on the variety.
  • You can harvest some of the young and tender new potatoes while leaving the rest to mature. Be careful not to damage the plant or other tubers when harvesting them.
  • Harvest remaining potatoes when the plants wilt and turn brown. Start digging well away from the crown of the plant to avoid slicing into the potatoes. Many gardeners favor using a spading fork for this task.
