If you have more fresh peppers than you can possibly use right now, you can dry them for later use. It does not matter if they are chili peppers, bell peppers or other varieties. And it does not matter if you have an electric food dehydrator or not. Peppers can be air dried, sun dried, dried in the oven or dried in an electric food dehydrator.
Air drying peppers can be a fun activity to do with children. For the best results, select only firm, fresh peppers free of any blemishes or other damage. Wash them thoroughly. Peppers in an array of colors, shapes, sizes and flavors grown at the UC Davis Student Farm are igniting interest in plant breeding and the astonishing botanical diversity of the Capsicum genus, to which all peppers belong.
