Background
Ted Christoph is the owner of Liberty Jersey Dairy in Churchill County, Nevada. He recently became the third-generation owner of the family dairy after completing the purchase of the business from his parents. Looking to expand and diversify operations, Ted sought technical assistance from the Southwest Regional Food Business Center (SWRFBC) to develop a business plan for launching a complementary venture focused on dairy processing and the manufacture of fluid milk and value-added products.
Our Response
Kelli Kelly, technical assistance provider with SWRFBC through the University of Nevada, Reno Extension, worked extensively with Ted to refine his business concept. This included developing a strategic product mix, planning for licensure and operations, and crafting a marketing and branding plan. Kelli guided Ted through the full business planning process, including detailed, dynamic pro forma financials that allowed him to model different production scenarios. She also provided consultation on selecting the appropriate dairy processing equipment and preparing for lender conversations. Through this collaborative process, Ted shifted his business model significantly, from focusing on a shelf-stable post-workout dairy drink to producing fresh skyr, cheese curds, ice cream base, and fluid milk, while also realigning his sales channels and target markets.

With the support of University of Nevada, Reno Extension and the Nevada Small Business Development Center under the SWRFBC, Ted developed a full set of historical financial analyses and forward-looking pro forma projections. These tools now allow Ted to assess the financial viability of the new processing business and understand how production levels will impact growth potential.

With the business planning phase complete, Ted’s next steps include securing financing by leveraging equity in his existing production dairy, purchasing and installing new processing equipment, and officially launching the venture.
