Two terms related to food production — “sustainability” and “food systems” — have been blended into a new major at the University of California, Davis. Sustainable Agriculture and Food Systems, the new undergraduate major, in some ways embodies a re-blossomed, student-driven interest in food production, akin to the organic farming movement of the 1970s.

Now that we’re in the thick of summer and eating bountiful quantities of uncooked fresh fruits and vegetables (salads, and fruit bowls, and tomatoes — oh my!), it’s time to make sure we handle them properly to avoid foodborne illnesses.
According to Dr. Trevlor Suslow, a plant pathologist and Cooperative Extension specialist at UC Davis, “Americans consume more than six billion servings of uncooked fresh fruits and vegetables every year, versus a very small number of illnesses that are clearly linked to foodborne pathogens.”

America is paying the price for its growing sweet tooth.
Just look at the rising rates of diabetes and obesity, said speakers at a March 17 symposium, “Sugar Highs and Lows: Dietary Sugars, the Brain, and Metabolic Outcomes,” at UC Davis.

Dipping fresh bread into olive oil has become a popular alternative to coating it with butter. Olive oil consists of 85 percent unsaturated fats, and when substituted for saturated fat in the diet can promote ”good” cholesterol (high density lipoprotein or HDL), reducing risk of coronary artery disease.
Some olive oils are more beneficial than others. "Extra virgin" olive oil (EVOO), for instance, is extracted from the olive fruit without using heat or chemical solvents.
